Method

  1. Boil fresh water and let it cool 2 to 3 minutes to about 80C; the green base in this blend turns bitter if hit with boiling water.
  2. Put the temple in the mug and pour the cooled water over it.
  3. Cover and steep 4 minutes, a little longer than plain green tea, so the fennel and nettle side has time to come through behind the green.
  4. Lift the bag out without squeezing.
  5. Taste; a slice of lemon brightens the herbal notes and a little honey rounds the savoury edge if you prefer it softer.
