The single biggest mistake people make with Green Tea is pouring boiling water straight onto it, which scorches the leaves and leaves you with something bitter and harsh. Let the kettle stand for a minute or two first, so the water drops to around 80C, and keep the steep short. Done that way, this one stays soft and clean, with the peach coming through like ripe stone fruit rather than boiled sweets.

You'll need

  • 1 pyramid tea bag of Teapigs Green Tea With Peach
  • 250ml freshly drawn water cooled to 80C
  • 1 250ml mug, warmed
  • 1 saucer for covering during steep

Method

  1. Warm your mug with a little hot water and pour it away.
  2. Boil the kettle, then let it stand for a minute or two to drop to around 80C.
  3. Drop in the pyramid bag and pour the cooled water over.
  4. Cover with a saucer and steep for just three minutes; any longer and green tea turns bitter.
  5. Lift the bag out and drink it as it is, with nothing added.
  6. Tip: no thermometer? Add a splash of cold water to freshly boiled water to land near green-tea temperature.
What you'll end up with: A clean, delicate cup of green tea with a soft, ripe-peach finish and no bitterness.
