Method

  1. A little hot water warms the peach green tea mug; pour it away.
  2. Once boiled, the kettle should cool to around 80C for the peach green tea, measured with a thermometer or a kettle set to that heat.
  3. Drop in the pyramid bag and pour the cooled water over.
  4. Cover with a saucer and steep for just three minutes; any longer and green tea turns bitter.
  5. Lift the bag out and drink it as it is, with nothing added.
  6. Tip: no thermometer? Add a splash of cold water to freshly boiled water to land near green tea temperature.
