Fennel and Lemon Spritz (Twinings Pure Fennel)
An alcohol free fennel and lemon spritz, like a soft pastis: chilled Twinings Pure Fennel, soda and fresh lemon.

This is a grown up drink with a real point of difference: chilled Twinings Pure Fennel topped with soda and lemon drinks a bit like a soft pastis. The naturally sweet aniseed sets off the sharp lemon, and because the fennel is sweet on its own you barely need any syrup.

Makes two tall glasses. Brew strong, chill, then build over ice and top with soda.
You'll need
- 3 tea bags of Twinings Pure Fennel
- 300ml freshly boiled water (100C)
- 1 tablespoon honey (optional)
- 200ml chilled soda water
- 1 lemon, half juiced and half sliced
- Plenty of ice
Method
- Brew strong: steep the 3 bags in the boiled water for 6 minutes, then lift them out.
- Stir in the honey while warm if using, then leave to cool and chill.
- Fill two tall glasses with ice and pour the chilled tea over, leaving room at the top.
- Add the lemon juice, top each with chilled soda water, and stir gently.
- Finish with lemon slices and serve straight away.
- Taste before adding honey; the fennel seed is naturally sweet and many find this spritz needs no extra sweetener at all.
