Bedtime Brew works just as well cold. Chilled and lengthened with soda, its vanilla and lemongrass turn into an easy, grown up drink, and a little lemon keeps it fresh. With no alcohol and no caffeine, it is a good one to pour after dinner.

You'll need

  • 1 tea bag of Yorkshire Tea Bedtime Brew
  • 120ml freshly boiled water (100C)
  • 15ml fresh lemon juice
  • 10ml honey syrup (equal parts honey and warm water, stirred until smooth)
  • Chilled soda water to top
  • Ice, a lemon slice and mint to serve

Method

  1. Pour the boiled water over the bag and steep for 3 to 4 minutes for a strong, aromatic brew. Lift out the bag and chill the tea.
  2. Fill a wine glass or tumbler with ice and add the cooled tea, lemon juice and honey syrup.
  3. Stir well, then top with chilled soda water.
  4. Garnish with a lemon slice and mint. With no caffeine or alcohol, it is an easy evening glass.
  5. Keep it light on the soda so the soft vanilla and lemongrass are not lost under the fizz.
What you'll end up with: A long, gently fizzing glass that tastes of vanilla and lemon, easy to sip late on.
