Brew it strong, chill it well, then build over ice and top with soda.
You'll need
- 1 tea bag of Yorkshire Tea Bedtime Brew
- 120ml freshly boiled water (100C)
- 15ml fresh lemon juice
- 10ml honey syrup (equal parts honey and warm water, stirred until smooth)
- Chilled soda water to top
- Ice, a lemon slice and mint to serve
Method
- Pour the boiled water over the bag and steep for 3 to 4 minutes for a strong, aromatic brew. Lift out the bag and chill the tea.
- Fill a wine glass or tumbler with ice and add the cooled tea, lemon juice and honey syrup.
- Stir well, then top with chilled soda water.
- Garnish with a lemon slice and mint. With no caffeine or alcohol, it is an easy evening glass.
- Keep it light on the soda so the soft vanilla and lemongrass are not lost under the fizz.
