Cerassie Bitter Spritz Mocktail (Tropical Sun)

Here the bitterness of Tropical Sun Cerassie becomes the whole point: it makes a convincing alcohol free stand in for a bitter aperitivo spritz, the Aperol sort of thing, with none of the booze. Brew it short, take the edge off with a little honey, then build it over ice with lime and soda.

You'll need

  • 3 tea bags of Tropical Sun Cerassie
  • 300ml freshly boiled water (100C)
  • 2 tablespoons honey, or to taste
  • 200ml chilled soda water
  • 1 lime, half juiced and half sliced
  • Plenty of ice

Method

  1. Brew on the short side: steep the 3 bags in the boiled water for 4 minutes, then lift them out.
  2. Stir in the honey while warm to balance the bitterness, then leave to cool and chill.
  3. Fill two tall glasses with ice and pour the chilled tea over, leaving room at the top.
  4. Add the lime juice, top each with chilled soda water, and stir gently.
  5. Finish with lime slices and serve straight away.
  6. Serve in a wide glass with a slice of orange beside the lime for an aperitivo feel.
What you'll end up with: A grown up, fizzy bitter spritz with honey and lime, the booze free answer to an aperitivo.
