Fennel and Lemon Spritz (Twinings Pure Fennel)

You'll need

• 3 tea bags of Twinings Pure Fennel
• 300ml freshly boiled water (100C)
• 1 tablespoon honey (optional)
• 200ml chilled soda water
• 1 lemon, half juiced and half sliced
• Plenty of ice

Method

1. Let the 3 bags of Pure Fennel brew strong for 6 minutes in the boiled water; remove them.
2. Honey, if using, goes into the warm fennel; cool, then chill.
3. Pour the chilled Pure Fennel into two tall glasses of ice, leaving a little room on top.
4. Add the lemon juice and top each Pure Fennel glass with chilled soda; stir gently.
5. Lemon slices on each fennel glass, served at once.
6. Taste before adding honey; the fennel seed is naturally sweet and many find this spritz needs no extra sweetener at all.
