Exact quantities, then the method.

Few things are as refreshing on a hot day as iced lemongrass. It is clean, citrusy and completely caffeine-free, so you can drink it by the jugful without a second thought. A wheel of lemon sharpens it, and a little mint, clapped between your hands first, lifts the whole glass. Brew it strong and let it cool properly, so the flavour still holds up once the ice goes in.

You'll need

  • 2 pyramid tea bags of Teapigs Pure Lemongrass
  • 200ml freshly drawn water at 100C, just off the boil
  • 200ml cold still water
  • 1 fresh lemon wheel
  • 3 fresh mint leaves
  • 1 tall 450ml glass, chilled in the freezer for ten minutes
  • Enough cubed ice (about 250g)
  • 1 small jug for steeping, 1 saucer for covering

Method

  1. Steep the 2 pyramid bags in 200ml just-boiled water for seven minutes under a saucer, then lift them out.
  2. Cool the brew right down in cold water or the fridge.
  3. Fill a tall glass with ice and pour the cooled tea over.
  4. Lengthen with the cold water, easing it in down the back of a spoon.
  5. Add the lemon wheel, clap the mint between your palms to release the scent, and drop it in.
  6. Tip: drop in a bruised stick of fresh lemongrass as a stirrer to push the flavour further.
What you'll end up with: A clean, citrusy glass of iced lemongrass, sharpened with lemon and freshened with mint.
