Pomegranate brings a sharp, tangy edge, and it shows best when the Green Tea underneath is treated gently. Cool the kettle to around 80C, steep for two minutes, and you get bright, tart fruit sitting on a soft leaf. Brew it any hotter and the tea turns astringent, which only fights the fruit.

You'll need

  • 1 tea bag of Twinings Pomegranate Green Tea
  • 200ml freshly boiled water, cooled for about a minute (around 80C)
  • A little honey, to taste (optional)

Method

  1. Boil the kettle, then let it stand for about a minute so the water drops to around 80C.
  2. Pop the bag into your cup and pour the water over.
  3. Steep for 2 minutes, no longer, to keep the leaf soft and let the fruit through.
  4. Lift out the bag without squeezing it, add a little honey if you like, and enjoy.
  5. Taste before adding honey; the tart pomegranate is often enough acidity and sweetness on its own in a well-brewed cup.
What you'll end up with: A soft green tea lit up by sharp, tangy pomegranate, brewed cool so it never tips into bitterness.
