Pukka Relax is a chamomile, fennel and marshmallow root infusion: pale yellow, faintly sweet, with a warm fennel anise note holding it together. Brew it covered and steep a little longer than ordinary chamomile, because the fennel and marshmallow root take more time to come through.

You'll need

  • 1 Pukka Organic Relax tea bag
  • 250ml just boiled water
  • A little honey, optional

Method

  1. Boil fresh water; chamomile is happy at full boil, and the root and fennel pieces actually want it.
  2. Put the bag in the mug, pour the water over and cover with a saucer; covering keeps the floral aroma in.
  3. Steep 6 to 7 minutes, longer than ordinary chamomile, because the marshmallow root needs time.
  4. Lift the bag out with a gentle press.
  5. Drink as is; if you like it sweeter, a small dash of honey suits without burying the fennel.
What you'll end up with: A gently sweet cup with chamomile florals, fennel anise and a soft marshmallow-root smoothness behind. Low fuss, caffeine-free.
