Method

  1. Boil fresh water; chamomile is happy at full boil, and the root and fennel pieces actually want it.
  2. Put the bag in the mug, pour the water over and cover with a saucer; covering keeps the floral aroma in.
  3. Steep 6 to 7 minutes, longer than ordinary chamomile, because the marshmallow root needs time.
  4. Lift the bag out with a gentle press.
  5. Drink as is; if you like it sweeter, a small dash of honey suits without burying the fennel.
