Superfruit Cordial Base
A caffeine free berry and hibiscus cordial: a sharp hot fruit cup, a vivid pink soda, or a no alcohol party punch.

A superfruit cordial is one of the prettiest things to keep in the fridge: a deep berry and hibiscus syrup that turns into a sharp hot fruit cup with boiling water, a vivid pink soda with fizz, or a no alcohol punch base for a party. Hibiscus brews strong and tart without any bitterness, so the base comes out intense and clean.

It uses Teapigs Superfruit, a pure caffeine free berry and hibiscus infusion. Fifteen minutes, and it makes about 500ml.
You'll need
- 6 Teapigs Superfruit tea temples
- 400ml water
- 250g caster sugar
- Juice of 1 lemon
- 1 strip of orange zest
Method
- Boil the water, pour over the 6 temples in a covered jug and steep 8 minutes for a deep, intense berry brew; hibiscus does not turn bitter on a long steep.
- Lift the temples out and pour the strong brew into a pan with the sugar and orange zest.
- Stir over low heat just until the sugar dissolves, then simmer 4 minutes to a light syrup.
- Take off the heat, stir in the lemon juice, and cool.
- Strain out the zest and pour into a clean bottle. Hot fruit cup: 1 part base to 4 parts just boiled water. Pink soda: 1 part base, 4 parts cold soda. Punch: dilute to taste with apple or orange juice.
- Keeps 2 weeks in the fridge; caffeine free, good for all ages.
