Rooibos makes a really good base for a kids' ice lolly: it's caffeine-free, so nobody is kept awake, and it's sweet enough on its own that you barely need to add any sugar. Brewed strong and mixed with real orange, it freezes into colourful, fruit-flecked pops the whole family can share, little ones included.

This uses Tetley Redbush Pure, Rainforest Alliance certified rooibos from South Africa's Western Cape. Six pops for about fifteen minutes of hands-on work, plus freezing.
You'll need
- 3 Tetley Redbush Pure rooibos tea bags
- 350ml freshly boiled water
- 150ml smooth orange juice, fresh or not from concentrate
- 1 tablespoon runny honey or maple syrup, optional, to taste (use maple syrup for under ones and for a vegan version)
- 1 small orange, peeled and segmented, the segments halved
- A small handful of raspberries or blueberries, optional, for colour
- 6 ice lolly moulds and sticks, roughly 75ml each
Method
- Put the rooibos bags in a jug and pour over the just boiled water. Steep a strong 8 minutes; rooibos cannot over brew, so a long steep gives deep colour and natural sweetness with no bitterness and no caffeine.
- Lift out and squeeze the bags, then stir in the honey or maple syrup while the tea is hot so it dissolves fully. Stir in the orange juice.
- Cool to room temperature, then chill in the fridge for 20 minutes. Cooling first stops the moulds warping and keeps the fruit suspended rather than floating to the top.
- Drop a few orange segments and berries into each mould so they are spread through, not all sitting at the bottom.
- Pour in the cooled rooibos and orange mix, leaving a 1cm gap at the top because the liquid expands as it freezes. Push in the sticks.
- Freeze for at least 6 hours, ideally overnight, until completely solid.
- To release, dip the mould in warm, not hot, water for about 10 seconds, then pull each stick gently and straight up.
