Frozen Rooibos Orange Pop (Family Friendly)

Method

  1. Put the rooibos bags in a jug and pour over the just boiled water. Steep a strong 8 minutes; rooibos cannot over brew, so a long steep gives deep colour and natural sweetness with no bitterness and no caffeine.
  2. Lift out and squeeze the bags, then stir in the honey or maple syrup while the tea is hot so it dissolves fully. Stir in the orange juice.
  3. Cool to room temperature, then chill in the fridge for 20 minutes. Cooling first stops the moulds warping and keeps the fruit suspended rather than floating to the top.
  4. Drop a few orange segments and berries into each mould so they are spread through, not all sitting at the bottom.
  5. Pour in the cooled rooibos and orange mix, leaving a 1cm gap at the top because the liquid expands as it freezes. Push in the sticks.
  6. Freeze for at least 6 hours, ideally overnight, until completely solid.
  7. To release, dip the mould in warm, not hot, water for about 10 seconds, then pull each stick gently and straight up.
