
This steeps Hyson Pineapple Infused Black Tea slowly in cold water overnight, with fresh pineapple and lime dropped into the jug. The long cold steep pulls out a smooth, naturally sweet flavour with very little tannin, so it never turns bitter or stewed the way a hot brew left too long can.

You'll need
- 5 tea bags of Hyson Pineapple Infused Black Tea
- 1L cold filtered water
- 4 thin slices of fresh pineapple
- A few thin slices of fresh lime
- Honey or sugar syrup, to taste (optional)
- Plenty of ice, to serve
Method
- Drop the 5 tea bags into a 1L jug or bottle and pour over the cold filtered water.
- Add the fresh pineapple and lime slices to the jug.
- Cover and refrigerate for 8 to 12 hours, or overnight. The slow cold steep keeps the flavour smooth and low in tannin.
- Lift out the tea bags. Taste, and stir in a little honey or sugar syrup if you want it sweeter.
- Pour over plenty of ice and serve, spooning some of the steeped fruit into each glass.
- A ripe pineapple gives a sweeter brew; check ripeness by smelling the base, where the sweetness is most detectable.
