Cold Brew Darjeeling
An overnight cold brew of Darjeeling, slow steeped in cold water for a soft, muscatel glass with no bitterness, served clean.

Delicate teas like Darjeeling reward a gentle hand, and nothing is gentler than cold water and time. Left to steep slowly overnight in the fridge, it gives up its grape like muscatel aroma without the tannin that can make a hot brew turn dry or bitter. What you pour the next morning is clear, faintly sweet and soft, the kind of iced tea that needs no sugar and no fuss.

You'll need
- 4 pyramid tea bags of Teapigs Darjeeling
- 1L cold filtered water
- 1 1L glass carafe with a tight seal lid
- 1 fine mesh sieve for straining
- 1 tall 450ml serving glass per serving, chilled
- Enough cubed ice per serving (about 250g)
Method
- Drop the 4 pyramid bags into a 1-litre carafe or jug.
- Pour over 1 litre of cold, filtered water.
- Seal and leave in the fridge for twelve hours, or overnight.
- Strain through a fine sieve into a clean jug.
- Serve over plenty of ice, clean and unsweetened.
- Keep the rest sealed in the fridge and drink within two days.
- Tip: pour it into wine glasses as an elegant, alcohol free stand in for chilled white at the table.
