A practical way to get matcha character without the whisk, bowl and faff: bright grassy sencha leads, with real matcha powder blended into the bag adding an umami depth and silky body a plain green bag never reaches. It is a convenient compromise, not ceremonial matcha, and it is the better for being upfront about that. Brew it cooler than black tea or the astringency sharpens; do that and it is one of the more interesting everyday greens here. Real green tea is in the blend, so it contains caffeine.

The Story Behind the Pukka Herbs Brand

Pukka Herbs is a Bristol firm, set up in two thousand and one by Tim Westwell and Sebastian Pole, and its herbal teas are now sold the world over.
  • Ayurvedic Heritage: Like the rest of the Pukka range, this matcha green draws on Ayurvedic ideas about bringing people closer to plants. In Hindi the word pukka stands for real or authentic.
  • Jeju Sourcing: The matcha in this blend comes from volcanic soil on Jeju Island in South Korea, and it is high quality, with plenty of chlorophyll behind its vivid green.

Brewing the perfect cup

Water temperature80°C; a thermometer or a variable temperature kettle is the reliable way there, because the cooling rate of boiled water changes with the volume and the kettle itself. Water at 100°C wrecks the fragile amino acids responsible for the soft, sweet side of green tea.
MeasureOne bag to 200ml of water, which is about a standard mug. For loose leaf, use one heaped teaspoon.
Steep2 to 3 minutes is the window; any more and the matcha blend tips into bitterness. Remove the bag promptly; do not squeeze.
ServiceSkip milk and sugar, as the sweet, grassy flavour is complete on its own. If you like, a lemon slice lifts it.
Cold brewGive one bag 4 to 8 hours of fridge time in a glass jug of 250ml cold water. Cold water pulls the sweeter compounds ahead of the rest, giving the mellowest green tea for a hot day.
