Organic Scottish biscuits, slowly baked on Mull using local renewable energy.
Joe and Dawn Reade turned a Tobermory bakery into one of Britain’s most distinctive organic biscuit makers. Real butter, straightforward ingredients and island-scale production make these natural tea-time partners.

“Island Bakery is what we reach for when someone asks what should sit beside a proper pot of tea. The Lemon Melts are bright and buttery, the shortbread has a clean snap, and the Chocolate and Ginger brings enough warmth for a strong Assam.”
Joe and Dawn Reade began baking bread in a converted Tobermory garage in 1994. After opening the Island Bakery Delicatessen in 1996, they identified a gap for organic biscuits that could travel beyond Mull. Island Bakery Organics launched in 2001 with four varieties.
The biscuit business outgrew the deli, and a purpose-built bakery opened in 2012. Its electricity comes from a hydro-electric turbine on the neighbouring river and a wind turbine above the bakery, while the ovens use local Mull wood chip for a slow, gentle bake.
“Joe returned to Mull and, with Dawn, began supplying Tobermory with bread before developing the organic biscuit range that could travel far beyond the island.”
“Dawn identified the opportunity for tempting organic biscuits and continues to shape the bakery’s presentation, packaging and public voice.”
Joe and Dawn start baking in a converted garage after the local baker retires.
A Main Street shop gives the Reades a close view of the speciality foods customers are looking for.
The first four organic biscuit varieties launch and quickly earn specialist-retail listings and awards.
The growing biscuit operation overtakes the deli and the shop is sold so the team can concentrate on baking.
The new bakery is completed with river and wind electricity plus local wood-chip oven heat.
Around forty people help make and send the bakery’s products from Tobermory.
Organic standards make every ingredient traceable and exclude routine synthetic pesticides and fertilisers. The bakery’s energy system was designed around resources available on and around Mull rather than treated as an afterthought.
