The Proper Hot Cup (Tropical Sun Green Tea, 80C, 2 Minutes)
Tropical Sun Green Tea brewed at about 80C for two minutes, fresh and lightly grassy rather than bitter.

Green Tea only needs one thing done right: do not scald it. Let the kettle cool for a minute to around 80C, give Tropical Sun Green a short two minute steep, and it comes out fresh and lightly grassy instead of bitter. If you have no temperature kettle, the trick is to start the mug with a splash of cold water.

You'll need
- 1 tea bag of Tropical Sun Green Tea
- 250ml just boiled water, cooled for a minute (about 80C)
- Honey or a slice of lemon, optional
Method
- Boil the kettle, then let it stand for about a minute so the water drops to around 80C.
- Pop the green tea bag in your mug and pour over the slightly cooled water.
- Steep for just 2 minutes, no longer, so it stays smooth and fresh.
- Lift out the bag without squeezing it, which would release bitterness.
- Drink as it is, or add a little honey or a slice of lemon.
- No temperature kettle? Pour 20ml cold water into the mug first, then the boiling water, to land near 80C.
