The Proper Hot Cup (Tropical Sun Green Tea, 80C, 2 Minutes)

You'll need

• 1 tea bag of Tropical Sun Green Tea
• 250ml just boiled water, cooled for a minute (about 80C)
• Honey or a slice of lemon, optional

Method

1. Boil the kettle, then let it stand for about a minute so the water drops to around 80C.
2. Pop the green tea bag in your mug and pour over the slightly cooled water.
3. Steep for just 2 minutes, no longer, so it stays smooth and fresh.
4. Lift out the bag without squeezing it, which would release bitterness.
5. Drink as it is, or add a little honey or a slice of lemon.
6. No temperature kettle? Pour 20ml cold water into the mug first, then the boiling water, to land near 80C.
