The spiced pear cup is poached pear in a mug: gentle pear sweetness wrapped in soft cinnamon and clove, the autumn cup to have by a fire. A full boil and a long covered steep get the pear to actually come through, where a short brew leaves it thin and barely flavoured.

You'll need

  • 1 Teapigs Spiced Pear tea temple
  • 250ml water at a full rolling boil
  • 1 thin slice of pear or apple, optional
  • 1 teaspoon honey, optional

Method

  1. Boil fresh water to a rolling boil; pear and spice pieces need 100C to release their warmth and colour.
  2. Put the temple in the mug with the pear or apple slice if using, and pour the boiling water over.
  3. Cover and steep 6 minutes; fruit and spice cannot over brew, and a long covered steep is what makes the pear actually come through rather than tasting like spiced water.
  4. Lift the bag out; the fruit slice can stay for a little more body.
  5. Taste before adding honey, the pear and spice often carry enough sweetness on their own.
What you'll end up with: A warming, lightly sweet cup that really does taste of poached pear, with cinnamon and clove behind. Autumn in a mug.
