The recipe

Exact quantities, then the method.

Homemade iced peach Green Tea beats anything out of a can, and it is barely any effort. The one thing to watch is the water: green tea wants it at around 80C, not boiling, or the finished drink carries a bitter undertone. Stir the honey in while the tea is still warm so it dissolves, then pour it over crushed ice and fresh peach. The real fruit lifts the peach already in the bag.

You'll need

  • 2 pyramid bags of Teapigs Green Tea With Peach
  • 250ml water heated to 80C
  • 1 fresh peach, sliced (2 slices for garnish, rest reserved)
  • 1 teaspoon runny honey
  • A handful of crushed ice
  • 1 350ml highball glass

Method

  1. Brew the 2 pyramid bags in 250ml water at around 80C for three minutes, then lift them out.
  2. Stir the honey into the warm tea until it dissolves, then chill for ten minutes.
  3. Drop a couple of peach slices into the glass and press them lightly with a spoon to release some juice.
  4. Fill the glass with crushed ice and tuck in a few more peach slices.
  5. Pour the cold tea over and serve straight away.
  6. Tip: out of peach season, a couple of slices of tinned peach in juice do the job just as well.
What you'll end up with: Iced green peach tea over crushed ice, lightly sweet and full of fresh stone fruit.
