Iced Chamomile Grapefruit
Iced Good Earth Chamomile and Grapefruit with fresh grapefruit segments, bruised thyme sprigs, acacia honey and cubed ice.

An iced jug of Good Earth Chamomile and Grapefruit for a warm afternoon, brightened with fresh pink grapefruit and a little thyme. The fresh grapefruit segments build on the grapefruit already in the bag, the thyme gives it a savoury, grown up edge that suits the fruit, and the camomile keeps it soft and floral underneath.

Brew it cooler than a Black Tea, around 95C, so the camomile does not scald, and infuse the fruit and thyme in from the start while it is hot. Sweeten lightly with honey, chill it down, and serve over plenty of ice with a slice of grapefruit on the glass.
You'll need
- 4 Good Earth Chamomile and Grapefruit tea bags
- 500ml freshly drawn water (used at 95C, off boil and stood 30 seconds)
- 1 large unwaxed pink grapefruit (half segmented into the jug, half sliced into thin rounds for serving)
- 4 small sprigs of fresh thyme, bruised between the palms
- 2 tbsp acacia honey or raw blossom honey
- 250ml well chilled still water
- Plenty of cubed ice for the jug and the serving glasses
- 100ml well chilled sparkling water (optional, for the long drink finish)
- 4 extra small thyme sprigs, for the serving glasses
Method
- Boil the kettle, then take it off the heat for thirty seconds to drop to about 95C, so the camomile does not scald.
- Segment half the grapefruit: slice off the peel and pith, then cut between the membranes to free the segments, and drop them into a 1-litre heatproof jug. Keep the other half for serving slices.
- Bruise the thyme sprigs between your palms and add them to the jug with the grapefruit.
- Add the four tea bags and pour the 500ml of water over the bags, fruit and thyme.
- Stir in the honey while it is hot, until it dissolves.
- Cover and steep for six minutes.
- Lift out the bags without pressing them, and discard. Leave the fruit and thyme in the jug.
- Add a handful of ice and stir for thirty seconds to cool it quickly, then stir in the chilled still water.
- Cover and chill in the fridge for twenty minutes to let it settle.
- Fill four tall glasses with ice, strain the tea over, and drop a few grapefruit segments and a thyme sprig into each. Add a slice of grapefruit to each glass, top with a splash of sparkling water if you want it longer, and serve at once.
