Iced Lemon and Ginger Cooler
A fizzy, caffeine free iced lemon and ginger cooler, brewed strong and lengthened with sparkling water, lemon and honey.

When the weather warms up, lemon and ginger does just as good a job cold as it does hot. Brewed strong, cooled, and lengthened with sparkling water, it makes a fizzy, gingery cooler far more interesting than lemonade, with no caffeine in it. A little honey stirred in while the tea is warm sweetens it evenly, and a wheel of lemon keeps it sharp.

You'll need
- 2 tea bags of Dragonfly Organic Lively Lemon and Ginger (for double strength)
- 200ml freshly drawn water at 100C, just off the boil
- 200ml cold sparkling water
- 1 fresh lemon wheel
- 1 teaspoon of clear honey
- 1 tall 450ml glass, chilled in the freezer for ten minutes
- Enough cubed ice (about 250g)
- 1 small jug for steeping
- 1 saucer for covering during steep
Method
- Steep the 2 tea bags in 200ml just boiled water for seven minutes under a saucer.
- Stir the honey into the warm brew until it dissolves, then lift the bags out.
- Cool the brew right down in cold water or the fridge.
- Fill a tall glass with ice and pour the cooled tea over.
- Top with the cold sparkling water and slip in a lemon wheel.
- Tip: drop a few thin slices of fresh ginger into the glass for a fierier, gingerier cooler.
