Iced Lemon and Ginger Cooler

Method

  1. Steep the 2 tea bags in 200ml just boiled water for seven minutes under a saucer.
  2. Stir the honey into the warm brew until it dissolves, then lift the bags out.
  3. Cool the brew right down in cold water or the fridge.
  4. Fill a tall glass with ice and pour the cooled tea over.
  5. Top with the cold sparkling water and slip in a lemon wheel.
  6. Tip: drop a few thin slices of fresh ginger into the glass for a fierier, gingerier cooler.
