Iced Vanilla Chai Frappe

This is a blended chai frappe, the kind of thick, cold, cafe-style drink you would normally queue for. Brew the turmeric chai strong, cool it, then blend it with milk, ice, a little vanilla syrup and a scoop of vanilla ice cream until smooth and thick.

You'll need

  • 2 tea bags of Yogi Tea Organic Turmeric Chai (for concentrate)
  • 100ml freshly drawn water at 100C, just off the boil
  • 150ml whole milk
  • 60g cubed ice
  • 2 teaspoons of vanilla syrup
  • 1 small scoop of vanilla ice cream
  • 1 generous swirl of squirty cream
  • A small pinch of ground cinnamon, for the dust
  • 1 tall 450ml glass, chilled
  • 1 small saucepan and a saucer for covering, 1 jug blender

Method

  1. Chill a tall glass.
  2. Steep two tea bags in 100ml of freshly boiled water for five minutes, then lift them out and cool the concentrate down.
  3. Tip the cooled chai, the milk, ice, vanilla syrup and ice cream into a blender.
  4. Blend for about thirty seconds until thick and smooth.
  5. Pour into the glass, top with cream and a dusting of cinnamon.
  6. Brew the chai strong and concentrated; a weak brew gets lost once the milk, ice and ice cream go in.
What you'll end up with: A thick, smooth chai frappe, sweet and spiced with a cool vanilla creaminess, under a cap of cream and cinnamon. A proper iced treat rather than an everyday drink.
