Makes a jug for four. Brew it hot and strong first, sweeten while warm, then chill it right down over ice. A handful of lemon slices and a little mint turn it into a proper summer pitcher.

You'll need

  • 4 tea bags of Tetley Original English Breakfast
  • 600ml freshly boiled water (100C)
  • 2 to 3 tablespoons sugar or honey, to taste
  • Juice of 1 lemon, plus extra slices to serve
  • 400ml cold water and plenty of ice
  • Mint to serve (optional)

Method

  1. Pour the freshly boiled water over the tea bags in a heatproof jug and steep for 4 minutes. This black tea takes the full boil.
  2. Lift out the bags, stir in the sugar while the tea is hot so it dissolves, then add the lemon juice and let it cool.
  3. Top with the cold water and a generous amount of ice to bring it to strength and chill it down.
  4. Add lemon slices and mint, and serve over more ice.
  5. If the chilled tea turns cloudy, stir in a small splash of just-boiled water and it will clear again.
What you'll end up with: A long, bright, classic lemon iced tea with a brisk black-tea backbone, sweet and refreshing for a crowd.
