Peach And Orange Tea Jelly (Twinings)

This sets a strong, fragrant brew of Twinings Peach and Orange into a wobbling grown up jelly, with pieces of real fruit suspended through it. It is light after a big meal and looks far more impressive than the small effort it takes.

Makes four to six glasses. Brew strong, dissolve the gelatine, add fruit, and chill until set.

You'll need

  • 4 tea bags of Twinings Peach and Orange
  • 500ml freshly boiled water (100C)
  • 4 sheets of leaf gelatine
  • 3 tablespoons honey or caster sugar
  • Juice of 1 orange
  • 1 peach, stoned and sliced, or a few orange segments

Method

  1. Soak the gelatine sheets in a bowl of cold water for 5 minutes until soft.
  2. Brew strong: steep the 4 bags in the boiled water for 6 minutes, then lift them out.
  3. Stir the honey or sugar into the hot tea until dissolved, then squeeze the gelatine and whisk it in until fully melted. Stir in the orange juice and leave to cool.
  4. Divide the sliced peach or orange segments between serving glasses, then pour the cooled tea over.
  5. Chill for at least 4 hours, or overnight, until softly set.
  6. Do not add fresh pineapple or kiwi, as their enzymes stop the jelly setting.
What you'll end up with: A clean, fruity, softly set jelly with real peach and orange, a pretty end to a dinner.
