These are a really good thing to have in the freezer over summer: proper fruit ice lollies with no caffeine, so the children can have them too. Rooibos gives a naturally sweet, fruity base, orange juice brings sharpness and colour, and a few strawberry slices frozen into each one look lovely once they are turned out. Far less sugar than the shop bought kind, and you know exactly what has gone into them.

You'll need

  • 2 tea bags of Tropical Sun Rooibos and Strawberry
  • 350ml freshly drawn water at 100C, just off the boil
  • 100ml fresh orange juice
  • 1 tablespoon of clear honey
  • 6 fresh strawberries, sliced (3 per mould)
  • 6 75ml lolly moulds with sticks
  • 1 small saucepan and a saucer for covering

Method

  1. Steep the 2 tea bags in 350ml just boiled water for seven minutes under a saucer, then lift them out.
  2. Stir the honey into the warm tea until it dissolves, then let it cool.
  3. Mix in the orange juice.
  4. Drop three strawberry slices into each lolly mould.
  5. Pour the mixture in, leaving a little headspace at the top for it to expand.
  6. Push in the sticks and freeze for at least four hours, until solid.
  7. Tip: dip the moulds in warm water for a few seconds to release the lollies cleanly.
What you'll end up with: Six bright, caffeine free fruit lollies with real strawberry pieces, far better than shop bought.
