A delicate overnight cold brew of lemon balm, slow steeped cold so it stays fresh and lemony, served clean over ice.

Cold Brew Lemon Balm Tea

Lemon balm is too delicate for a hot pot, which is exactly what makes it such a good candidate for cold brewing. There is no hot water to stew the leaves and turn them grassy, so what you get is pure, clean lemon scent and a touch of natural sweetness, nothing harsh at all. Leave the bags in cold water overnight and by morning you have a jugful of gentle, fragrant iced tea, ready for the first warm day.

You'll need

  • 4 pyramid tea bags of Teapigs Happy Tea With Lemon Balm
  • 1L cold filtered water
  • 1 1L glass carafe with a tight seal lid
  • 1 fine mesh sieve for straining
  • 1 tall 450ml serving glass per serving, chilled
  • Enough cubed ice per serving (about 250g)

Method

  1. Drop the 4 pyramid bags into a 1-litre carafe or jug.
  2. Pour over 1 litre of cold, filtered water.
  3. Seal and leave in the fridge for twelve hours, or overnight.
  4. Strain through a fine sieve into a clean jug.
  5. Serve over plenty of ice, clean and unsweetened.
  6. Keep the rest sealed in the fridge and drink within two days.
  7. Tip: if you grow lemon balm, add a handful of fresh leaves with the bags for a brighter, greener scent.
What you'll end up with: Clean, fragrant cold brewed lemon balm, gently lemony and never stewed.
