Cold Brew Lemon Balm Tea

You'll need

Method

  1. Drop the 4 pyramid bags into a 1-litre carafe or jug.
  2. Pour over 1 litre of cold, filtered water.
  3. Seal and leave in the fridge for twelve hours, or overnight.
  4. Strain through a fine sieve into a clean jug.
  5. Serve over plenty of ice, clean and unsweetened.
  6. Keep the rest sealed in the fridge and drink within two days.
  7. Tip: if you grow lemon balm, add a handful of fresh leaves with the bags for a brighter, greener scent.
