The Hot Cup of Tetley Lemon Drizzle Cake
A cake in a mug afternoon treat: black tea that tastes of buttery sponge and zesty lemon icing, brewed at a full boil.

The Hot Cup of Tetley Lemon Drizzle Cake is a cake in a mug afternoon treat: a real Black Tea built to taste of warm, buttery sponge with a sweet, zesty lemon icing finish. Brewed properly it drinks like a proper cup wearing a cake costume, not thin flavoured water.

Serves one. It is a black tea, so give it a full boil and a normal steep. Try it black first to taste the lemon drizzle, then add milk for a creamier cup if you like.
You'll need
- 1 tea bag of Tetley Lemon Drizzle Cake
- 200ml freshly boiled water (100C)
- Optional: a splash of milk, or a little honey
Method
- Boil fresh water and pour it over the bag at a full 100C. It is a black tea, so it wants the heat.
- Steep for 3 to 4 minutes to bring out the buttery sponge and lemon icing notes.
- Lift out the bag. Try it black first to taste the lemon drizzle character.
- Add a splash of milk for a creamier cake and custard cup, or a little honey to push the sweetness.
- Pull the bag at the short end, around 3 minutes; over brewing buries the delicate lemon icing notes under tannin.
