What Freeze Drying Actually Does
Instant coffee is made by brewing real coffee at scale and then taking the water back out, and how you take the water out decides most of what the finished granule tastes like. Spray drying blasts the liquid extract through hot air, which is fast and cheap but drives off a good deal of the aromatic compounds along with the water. Ideal Preparation

- Dose: keep the rounded teaspoon but drop to 150ml of water instead of 200ml.
- Stir: as usual, until completely clear.
- Serve: black, or with a teaspoon of milk rather than a splash.

Getting It Right in the Cup
- Water temperature: just off the boil, around 90 to 95 degrees Celsius.
- Measure: 1.8g per 200ml, which is one rounded teaspoon.
- Storage: lid tight, dry cupboard, dry spoon every time. A single damp teaspoon will clump the whole jar into a brick within weeks, and clumped granules dissolve unevenly and taste flat.
