Beans off a recent roast are still giving off carbon dioxide, and that gas disrupts a shot: fast, thin, erratic, then suddenly right about a week after the roast date. Do not start chasing the grind on day one. After that it is sweet, cocoa-led and full, with the acidity arriving as lift rather than sharpness. Whole bean, so a burr grinder is part of the purchase; a blade one will undo the whole thing before the water gets near it.

A commodity roaster optimises for consistency across enormous volume. A speciality roaster optimises for what a particular coffee can be made to do.
