- Pour: empty the sachet into a dry mug first, then pour the water in from a height and fairly fast. The drop is what creates the foam.
- Do not stir: or stir once, briefly, from the bottom. Every extra stir is foam you have just knocked flat.
The Sweetening Decision
- Sugar: half a teaspoon is usually enough, because there is no competing sweetness already there. Put it in the dry mug with the powder so it dissolves properly.
- Honey or syrup: stir into the dry powder with a splash of hot water first, then top up, or it sinks and sits at the bottom.
- Chocolate: a teaspoon of cocoa in the dry mug makes it a decaf mocha, and because the base is unsweetened you set the sugar rather than stacking it on more.
