The Story Behind Nescafé Azera
Nestlé launched Nescafé in 1938 with a genuinely new idea: coffee you could store and make a cup at a time. Azera is the modern answer to the obvious criticism of that idea, which is that dissolving a granule is not brewing. By blending finely ground roasted coffee into the soluble base, Azera closes part of the gap between instant and brewed without asking anyone to buy a machine. The decaf version applies that same formula to the part of the day when caffeine is the problem rather than the point.

- Water temperature: 90 to 95°C. Never straight off a rolling boil.
- Measure: One rounded to one heaped teaspoon, about 2.5g, per 250ml mug.
- Method: Paste first with a little water, then top up. Undissolved ground coffee at the bottom of the mug is the usual sign this step was skipped.

Azera is built for a long mug, and most disappointment with it comes from treating it like a normal instant in a small cup. Dose it properly, use a large mug, and rest the kettle before you pour. Boiling water is harder on the ground coffee in the blend than it is on the soluble part, and it is the quickest way to make a gentle decaf taste harsh.

How to make Azera Decaf the way it is designed to be made.
- 1 rounded to heaped teaspoon Azera Decaf Americano, about 2.5g
- 250ml water at 90 to 95°C
- A small splash of milk, optional
- Rest the kettle for thirty seconds after it clicks off. Boiling water scalds the ground coffee in the blend and makes a gentle decaf taste harsh.
- Paste the Nescafe Azera Decaf Americano Instant Coffee with Finely Ground Beans, 135g with a splash of the hot water and stir it smooth, so the grounds wet through.
- Top up to 250ml. Use a large mug: this is an americano build, not a small strong cup.
- Finish black, or with a small splash of milk. A lot of milk buries the roasted note you are paying for.
What you'll end up with: A long, round, roasted mug with a little sediment at the bottom. The sediment is the real ground coffee doing its job, not a fault.

- 2 heaped teaspoons Azera Decaf Americano
- 60ml hot water
- 150ml milk, dairy or barista oat
- Dissolve 2 heaped teaspoons of Nescafe Azera Decaf Americano Instant Coffee with Finely Ground Beans, 135g in just 60ml of hot water to make a dark concentrate.
- Heat 150ml of milk and whisk or steam it until it is glossy rather than foamy.
- Pour the milk into the concentrate slowly so the two fold together.
- Build it in this order. A normal dose drowned in 150ml of milk gives you warm milk and very little coffee.
What you'll end up with: A milk coffee with enough character to be worth making at nine in the evening, which is the entire reason to keep a good decaf in the cupboard.
Late Iced Decaf
How to make an iced coffee with Azera Decaf you can drink after dinner.
- 2 heaped teaspoons Azera Decaf Americano
- 80ml hot water
- Sugar to taste, optional
- 150ml cold milk
- Plenty of ice
- Dissolve 2 heaped teaspoons of Nescafe Azera Decaf Americano Instant Coffee with Finely Ground Beans, 135g in 80ml of hot water.
- Sweeten now, while it is hot. Sugar stirred into a cold glass sits at the bottom and stays there.
- Fill a tall glass with ice and pour the concentrate over.
- Top up with 150ml of cold milk and stir once.
What you'll end up with: A cold coffee on a warm evening with no consequences at one in the morning. Cold serving also softens what little bitterness a decaf carries.
Mocha Nightcap
How to make a chocolate coffee with Azera Decaf for the end of the evening.
- 2 heaped teaspoons Azera Decaf Americano
- 2 teaspoons cocoa powder
- 1 to 2 teaspoons sugar
- 220ml hot milk
- Mix the Nescafe Azera Decaf Americano Instant Coffee with Finely Ground Beans, 135g, cocoa and sugar together dry in the mug, which stops the cocoa lumping.
- Add a tablespoon of hot water and work it to a smooth paste.
- Pour in 220ml of hot milk, stirring as you go.

- 3 heaped teaspoons Azera Decaf Americano
- 100g caster sugar
- 100ml water
- Vanilla ice cream or plain sponge, to serve
- Heat the sugar and water in a small pan until the sugar has completely dissolved.
- Stir in 3 heaped teaspoons of Nescafe Azera Decaf Americano Instant Coffee with Finely Ground Beans, 135g off the heat.
- Simmer gently for two to three minutes until it coats the back of a spoon, then cool. It thickens further as it cools, so stop early rather than late.
- Keep in a jar in the fridge for up to two weeks and pour over ice cream, sponge or porridge.
What you'll end up with: A strong coffee syrup that is safe to give to anyone at any hour, which is not true of one made with caffeinated coffee.

- A warmed jug or small teapot
- Dark chocolate, to serve
- Warm the jug with hot water and tip it out, so the coffee does not lose ten degrees on contact.
- Paste 2 rounded teaspoons of Nescafe Azera Decaf Americano Instant Coffee with Finely Ground Beans, 135g in the bottom of the jug with a little hot water.
- Pour in 500ml of rested water and stir well.
- Serve straight away, with milk on the side and a square of dark chocolate each.
