Watch the crema. It should come out heavy and hazelnut-coloured and sit on the surface rather than spread and thin, which is the quickest tell that capsule and machine are working with each other. What follows is dark. Roasted cocoa and dark caramel, a liquid thick enough to coat the side of the cup, and almost no fruit or brightness anywhere in it. If what you want from a morning cup is lift and a citrus edge, this is the wrong end of the shelf and no amount of fiddling with the machine will put it there. What it does have is a finish that arrives, sits for a moment and goes, instead of settling on the tongue and staying put, which is the honest difference between a deep roast and a scorched one. Machine check before you spend anything: these are made for Nespresso Original machines and will not run in a Vertuo, which reads a barcode on its own capsules and accepts nothing else.

L'Or is the capsule and pod arm of the Jacobs Douwe Egberts group, and its position in the market is plain rather than romantic: make capsules that fit the machine most British households already own, in aluminium rather than plastic. The range is built to be chosen from a shelf in a supermarket in ten seconds, with named profiles running from a long, gentle lungo up to this ristretto, so a customer can pick by strength without learning a new vocabulary first.

About compatibility: L'Or's Espresso capsules are made for Nespresso Original machines, and that compatibility claim belongs to L'Or and is printed on the current UK pack rather than being ours. What A Ristretto Actually Changes

Extraction is a sequence rather than a single event. The first water through the bed picks up the most soluble compounds, which are the sweet ones and the acidic ones; the middle brings body and the cocoa-and-caramel register; the last of it brings the dry, woody, bitter compounds that give a long shot its tail. Stop early and you take the first two and decline the third. That is why a ristretto reads sweeter than an espresso from the identical capsule, which surprises people who expect short to mean harsh.

The trade is concentration. There is very little water in the cup to carry the aroma, so a ristretto smells less than it tastes and it cools quickly. It is also the capsule to reach for when you are making a small milk drink, because a cortado needs a coffee still tasteable through 60ml of milk.

Getting A Consistent Cup

  • Descale on schedule: scale lowers the water temperature at the group more than it restricts the flow, so a scaled machine under-extracts quietly rather than failing loudly.
  • Keep the capsules sealed: leave them in the carton until the moment of use; the individual seal is the entire preservation system.
  • Empty the capsule bin: a full bin is the most common reason a capsule fails to seat and pierce cleanly and the shot runs short or sideways.
  • Filtered water: in a hard-water area a filter jug does more for the cup than changing capsules will.
  • Do not re-run a used capsule: the second pass gives you the bitter tail of the first extraction and nothing else.
  • Caffeine note: a regular caffeinated coffee rather than a decaf. Check the current pack if you need a figure per cup.
  • Best with: dark chocolate, an almond biscuit, or on its own after a meal.

  1. Rinse a blank shot of hot water into the cup to warm it, and tip it out.

  3. Pour the milk through the crema in one steady motion.
  4. Serve straight away, without a spoon.

What you'll end up with: The drink this capsule is best at. Sixty millilitres of milk is the most a single short shot will carry without disappearing.
