The grind inside a capsule is finer than anything you would dare put through a home machine, because the capsule holds it in place and there is nothing to tamp. That is why the red-pack blend arrives denser here than the same coffee does out of a bag, with more grip and more weight behind it, and it is the real reason to buy the capsule rather than the ground version. A Modo Mio fitting only: a Nespresso machine will not take it, and neither will a Dolce Gusto or a Tassimo. Check the machine before you check the coffee. What arrives in the cup is cocoa and toasted nut, measured bitterness, very little acidity, and enough body to survive a full cup of milk. Caffeinated.

Qualità Rossa is the red pack that sits on Italian kitchen shelves and in half the cafes in Britain, an Arabica and Robusta blend built for the middle of the road in the best sense: balanced, chocolatey, dependable, and recognisable from one year to the next. This box holds sixteen capsules, 120g of coffee in total, for sixteen espressos in an A Modo Mio machine.

Buying the house blend in capsule form is a different decision from buying it ground. Ground Qualità Rossa gives you the dose to play with and a much lower price per cup; the capsule takes the dose, the grind and the tamp out of your hands entirely and gives you back the same shot every morning with nothing to clean. The story behind the pack

Lavazza has roasted in Turin since 1895, when Luigi Lavazza began blending green coffee behind a grocery counter rather than selling origins separately. That decision is the whole company. Blending is what lets a roaster hold one cup steady from year to year while the harvests underneath it move, and Qualità Rossa is the clearest expression of it in the range: the blend the house is known for, the one that has to taste the same in Turin, Toulouse and Tunbridge Wells.

A Modo Mio is Lavazza's own capsule system, and it is closed. These capsules fit A Modo Mio machines and nothing else; nothing from Nespresso, Dolce Gusto or Tassimo will go into an A Modo Mio, and an A Modo Mio capsule will not go into any of them. Look at the name printed on the front of the machine before you order if you are not sure which one you own. What you get in exchange for accepting a closed system is that the three variables that wreck home espresso, the dose, the grind and the tamp, are settled in the factory rather than on your worktop.

  • Against the intense capsules in the same range: those are built to land hard in a small cup. This is the balanced one, which makes it the better choice for a household where people take their coffee differently, and the safer one to hand to a guest.
  • Against other capsule systems: A Modo Mio is closed, so the comparison only matters while you are choosing a machine. Once one is on the worktop, this is the house blend for it.

Getting the best out of it

The dose, the grind and the tamp are already decided. What you still control is the water, the cup and where you stop the shot.

The straight espresso

  • Warm the cup: 25 to 30ml of liquid in cold porcelain is lukewarm within seconds, and cool coffee reads noticeably more bitter than hot coffee at the same strength. Run hot water in and tip it out.

  • Fresh water: Fill the tank from the cold tap rather than topping up what stood overnight. Standing water reads flat in any coffee.

  • Length: Start with a standard shot. A balanced blend gives you room to move in both directions, unlike a very dark capsule where short is almost always better.

  • Drink it soon: the crema falls within a minute or two and takes most of the aromatics with it.

Lengthened and with milk

  • Lungo: Let it run for a bigger cup. A mid-intensity blend takes the extra water better than a light one, which would thin out, and more gracefully than a very dark one, which turns dry at the tail.

  • Cappuccino or latte: One shot to 120 to 150ml of steamed milk. The chocolate and nut register of this blend is what makes it work in milk; it is the classic Italian breakfast cup for a reason.

  • Americano: Put 80ml of hot water in the cup first and brew on top of it, which keeps the crema intact instead of breaking it on impact.

Practical notes on the pack

  • Yield: 16 capsules, 16 espressos, one capsule per shot. If your household drinks doubles, that is eight servings.
  • Weight: 120g of coffee across the box, which works out at 7.5g in each capsule.
  • Machine fit: Lavazza A Modo Mio machines only. Not Nespresso, not Dolce Gusto, not Tassimo.
  • Storage: cool, dry and dark, away from the hob and from anything strongly scented. The capsules are individually sealed, so the box is protecting them from heat and from being crushed.

  1. Warm the cup with hot water and tip it out.
  2. Brew a standard espresso; this blend is balanced enough to start in the middle.
  3. Drink it within a minute, while the crema is still capping the cup.

What you'll end up with: A chocolatey, medium-bodied shot with a firm crema. The reference point to judge every other build against.

Cappuccino

The blend's home ground, and the ratio that keeps the coffee audible.
