Lavazza is the Turin coffee house whose blending is the point of the company. Italy is not a coffee-growing country, so the Italian coffee tradition is a blending tradition: buy green coffee from several origins, roast it to a house profile and produce the same cup this year as last year. Qualità Oro is the blend the company built that reputation on, and Lavazza publishes it as a 100 per cent Arabica composition, which is the line worth understanding when you are choosing between it and the Robusta-carrying blends beside it.
Arabica and Robusta are not better and worse, they are different tools. Robusta brings body, thick crema, more caffeine and a woody bitterness that Italian bars have used for a century to make an espresso that stands up to sugar. - 15g Lavazza Qualità Oro Coffee Beans
- 250ml water at 94C
- 1 burr grinder
- 1 cafetiere
- Grind 15g of beans coarse, like sea salt, immediately before you start.
- Pour 250ml of water at about 94 degrees over the grounds and stir once.
- Wait four minutes, then break the crust with a spoon and skim off the foam.
- Plunge slowly and decant the whole pot at once; coffee left on the grounds keeps extracting.
What you'll end up with: A clean, sweet, floral cup with the aromatics still in it, which is what the grinder was for.
The Double Espresso

- 18g Lavazza Qualità Oro Coffee Beans
- 1 burr grinder
- Filtered water
- 1 tamper
- Grind 18g fine, fine enough to clump slightly when pinched.
- Tamp level and firm in the basket.
- Pull for about 36g of liquid in 25 to 30 seconds.
- Adjust the grind rather than the dose if it runs fast and sour or slow and bitter.
What you'll end up with: A sweet, silky, low-bitterness double with a hazelnut crema, and no need for sugar to correct it.
Moka Pot On The Hob

- 16g Lavazza Qualità Oro Coffee Beans
- Pre-boiled water to the valve
- 1 moka pot
- Fill the base with water already boiled, up to the valve, so the coffee spends less time heating.
- Grind medium-fine and fill the basket level without tamping.
- Heat on a medium hob with the lid open.
- Pull it off the heat the moment the stream turns pale and gurgles, and run the base under a cold tap.
What you'll end up with: A thick stovetop cup with the blend's cocoa finish pushed forward, and none of the scorched taste a moka pot gives when it is left on the heat.
Overnight Cold Brew
How to make Overnight Cold Brew with Lavazza Qualità Oro Coffee Beans.
- 60g Lavazza Qualità Oro Coffee Beans
- 600ml cold water
- 1 jar and a filter
- Ice
- Grind 60g of beans coarse and put them in a jar with 600ml of cold water.
- Stir once, lid it and leave it in the fridge for sixteen hours.
- Strain through a paper filter, slowly and without pressing.
- Serve over ice, diluted one to one with water or milk if it is too strong.
What you'll end up with: A rounder, sweeter, chocolate-heavy concentrate that keeps four days in the fridge and makes the best iced coffee of the summer.

How to make Coffee Rub For Beef Or Lamb with Lavazza Qualità Oro Coffee Beans.
- 20g Lavazza Qualità Oro Coffee Beans
- 10g flaked sea salt
- 10g dark brown sugar
- 5g cracked black pepper
- Grind 20g of beans medium-coarse; you want texture, not powder.
- Mix with the salt, sugar and pepper.
- Rub into beef or lamb and leave it for an hour at room temperature.
- Sear hard, then finish in the oven. The sugar will darken, which is the point.
What you'll end up with: A dark savoury crust with the cocoa notes of the blend running through it, and no bitterness because the grind is coarse.

- 18g Lavazza Qualità Oro Coffee Beans
- 2 scoops vanilla ice cream
- Grated dark chocolate
- Put one scoop of vanilla ice cream into each of two glasses.
- Grind and pull a double espresso.
- Divide it between the two glasses while it is still hot.
- Grate a little dark chocolate over the top and eat immediately.
