Non-Alcoholic Apple Pie Chai Toddy

A warming, alcohol free toddy for cold evenings, built on hot cloudy apple juice instead of the usual whisky and water. An apple pie chai powder whisked into the hot juice deepens the fruit and brings a proper apple pie spice, with honey to sweeten and a slice of lemon to lift it. It is comforting and suitable for all ages.

You'll need

  • 25g Drink Me Chai Apple Pie Chai Latte powder (1 standard serving)
  • 200ml fresh cloudy apple juice
  • 1 teaspoon of clear runny honey
  • 1 half slice of fresh lemon, for the rim
  • 1 short cinnamon stick (about 4cm), to lay across the rim and stir with
  • 1 warmed 350ml mug
  • 1 small saucepan
  • 1 small balloon whisk

Method

  1. Warm a mug with hot water, then pour it away.
  2. Pour the apple juice into a small saucepan and warm it gently to around 80C, just below a simmer; do not boil it hard, or it loses its fresh fruit character.
  3. As soon as it steams and bubbles at the edges, take it off the heat.
  4. Shower in the apple pie chai powder and whisk hard for thirty seconds until smooth, with a soft foam.
  5. Pour through a fine sieve into the warmed mug.
  6. Stir in the honey at the end, so it stays clean and does not scorch in the pan.
  7. Lay a cinnamon stick across the rim to stir with, and hook a half slice of lemon on the side.
  8. Tip: a splash of dark rum turns it into the grown up version, if you do want it boozy.
What you'll end up with: A warm, amber spiced apple toddy, fruity and gently spiced with honey and a cinnamon stick stir, for all ages.
