Green Tea, cucumber and fresh mint make a really refreshing cold drink, and it takes next to no effort. Brew the tea gently so it stays grassy rather than bitter, leave it to chill, and you end up with something clean and light that needs barely any sugar.

You'll need

  • 2 bags Rochambeau Green Tea with Mint Infusion
  • 500ml water, just off the boil (about 80C, not boiling)
  • 8 thin slices of cucumber
  • A small handful of fresh mint
  • 1 tsp honey, optional
  • Plenty of ice

Method

  1. Steep the 2 green tea bags in 500ml of 80C water for 3 minutes only. Hotter or longer makes it bitter.
  2. Stir in the honey while warm if using, then lift out the bags and cool to room temperature.
  3. Lightly press the cucumber and mint in a jug to release their oils, do not pulp them.
  4. Pour the cooled tea over the cucumber and mint, add ice and chill for an hour.
  5. Serve over fresh ice with a cucumber ribbon. Drink the same day.
What you'll end up with: A clean, grassy, faintly sweet cooler that tastes of green tea and garden, not syrup. The cucumber keeps it soft and the mint keeps it bright.
