Minted Green Tea & Cucumber Cooler

You'll need
- 2 bags Rochambeau Green Tea with Mint Infusion
- 500ml water, just off the boil (about 80C, not boiling)
- 8 thin slices of cucumber
- A small handful of fresh mint
- 1 tsp honey, optional
- Plenty of ice
Method
- Steep the 2 green tea bags in 500ml of 80C water for 3 minutes only. Hotter or longer makes it bitter.
- Stir in the honey while warm if using, then lift out the bags and cool to room temperature.
- Lightly press the cucumber and mint in a jug to release their oils, do not pulp them.
- Pour the cooled tea over the cucumber and mint, add ice and chill for an hour.
- Serve over fresh ice with a cucumber ribbon. Drink the same day.
