Minted Green Tea & Cucumber Cooler

Method

  1. Steep the 2 green tea bags in 500ml of 80C water for 3 minutes only. Hotter or longer makes it bitter.
  2. Stir in the honey while warm if using, then lift out the bags and cool to room temperature.
  3. Lightly press the cucumber and mint in a jug to release their oils, do not pulp them.
  4. Pour the cooled tea over the cucumber and mint, add ice and chill for an hour.
  5. Serve over fresh ice with a cucumber ribbon. Drink the same day.
