Ginger Tea Latte
Ginger and honey tea brewed strong with cardamom, then topped with frothed milk; a gentle, chai like latte.

If you like chai, this is its gentler cousin: ginger tea loosened with hot milk and a whisper of cardamom, warming without the long list of spices. The Dilmah blend already carries honey, so it comes out sweet enough on its own with nothing else added.

Crushing a couple of cardamom pods into the brew is the one step worth not skipping, as it lifts the ginger and makes the mug smell wonderful while it steeps. One mug, under ten minutes, with nothing fancier than a small whisk to froth the milk.
You'll need
- 2 tea bags of Dilmah Ginger and Honey (for concentrate)
- 100ml freshly drawn water at 100C, just off the boil
- 180ml whole milk
- 2 whole green cardamom pods, lightly crushed open
- 1 280ml mug, warmed
- 1 small saucepan and a saucer for covering
- 1 small balloon whisk or milk frother
Method
- Warm your mug. Put 2 tea bags and 2 lightly crushed cardamom pods into a small jug.
- Pour over 100ml of just boiled water, cover, and steep for 5 minutes.
- Lift out the bags and pods, pressing the bags to squeeze out a strong concentrate.
- Heat the milk to about 65C and froth it until silky.
- Pour the concentrate into the mug, then float the frothed milk on top over the back of a spoon.
- Drink straight away, while the foam holds.
- Like it fierier? Add a thin slice of fresh ginger to the jug while it steeps.
