Ginger Tea Latte

Method

  1. Warm your mug. Put 2 tea bags and 2 lightly crushed cardamom pods into a small jug.
  2. Pour over 100ml of just boiled water, cover, and steep for 5 minutes.
  3. Lift out the bags and pods, pressing the bags to squeeze out a strong concentrate.
  4. Heat the milk to about 65C and froth it until silky.
  5. Pour the concentrate into the mug, then float the frothed milk on top over the back of a spoon.
  6. Drink straight away, while the foam holds.
  7. Like it fierier? Add a thin slice of fresh ginger to the jug while it steeps.
