Boba Bubble Tea with Yorkshire Tea Gold Blend
Homemade bubble tea built on strong, sweet Yorkshire Gold, poured over chewy tapioca pearls.

Bubble tea started life as sweet, milky Black Tea over tapioca, so a robust builder's brew like Yorkshire Gold is a natural base. It holds its own against the milk, sugar and ice instead of fading into them.

Cook the pearls first, brew it strong and sweet, chill it, then layer everything over ice and drink through a wide straw.
You'll need
- 2 tea bags of Yorkshire Tea Gold Blend
- 200ml freshly boiled water (100C)
- 60g dried tapioca pearls (boba)
- 100ml milk or oat milk
- 2 tablespoons brown sugar or honey, to taste
- Plenty of ice
Method
- Cook the tapioca pearls as the pack directs, until soft and chewy, then drain and toss in a little sugar.
- Pour the boiled water over the tea bags and steep for 4 to 5 minutes for a strong brew. Lift out the bags and stir in the sugar while hot, then let it cool.
- Spoon the pearls into a tall glass and add plenty of ice.
- Pour over the cooled sweet tea, top with the milk, and stir. Drink with a wide straw.
- Drink it soon after making, as the tapioca pearls turn hard if left to chill for long.
