Chilled fennel tea makes a surprising spritz: the sweet aniseed reads like a soft, alcohol-free pastis. Brew Tropical Sun Fennel, chill it well, then build it over ice with lemon and soda. Faintly liquorice-sweet, lifted by the lemon, and not a drop of alcohol.

You'll need

  • 3 tea bags of Tropical Sun Fennel
  • 300ml freshly boiled water (100C)
  • 1 tablespoon honey, or to taste
  • 200ml chilled soda water
  • 1 lemon, half juiced and half sliced
  • Plenty of ice

Method

  1. Steep the 3 fennel bags in the boiled water for 5 minutes, then lift them out.
  2. Stir in the honey while warm, then leave to cool and chill well.
  3. Fill two tall glasses with ice and divide the chilled fennel tea between them.
  4. Add the lemon juice, top each with chilled soda water and stir gently.
  5. Finish with lemon slices and serve straight away.
  6. Fennel is naturally sweet enough that this spritz often needs no honey at all; taste before adding any sweetener.
What you'll end up with: A soft, aniseed spritz with lemon and fizz, like a pastis with the alcohol left out.
