Fennel and Lemon Spritz Mocktail (Tropical Sun)

You'll need

• 3 tea bags of Tropical Sun Fennel
• 300ml freshly boiled water (100C)
• 1 tablespoon honey, or to taste
• 200ml chilled soda water
• 1 lemon, half juiced and half sliced
• Plenty of ice

Method

1. Steep the 3 fennel bags 5 minutes in the boiled water; out they come before chilling.
2. Stir in the honey while warm, then leave to cool and chill well.
3. Ice two tall glasses and share the chilled fennel tea between them.
4. Lemon juice goes in, then chilled soda over each fennel glass, with a gentle stir.
5. Finish the fennel spritz with lemon slices; serve now.
6. Fennel is naturally sweet enough that this spritz often needs no honey at all; taste before adding any sweetener.
