You'll need

  • 1 Teapigs Liquorice and Peppermint tea temple
  • 250ml water, boiled then left 30 seconds off the boil
  • A slice of lemon, optional

Method

  1. Boil fresh water and let it stand 30 seconds. Just off the boil protects the peppermint menthol while still being hot enough to draw the liquorice sweetness.
  2. Put the temple in the mug, pour the water over and cover with a saucer.
  3. Steep 5 to 6 minutes, a touch longer than plain peppermint, because liquorice root releases its natural sweetness slowly.
  4. Lift the bag out with one gentle press. The longer steep is safe here; liquorice does not turn bitter the way over stewed Black Tea does.
  5. Taste before adding anything; it is usually sweet enough on its own. A slice of lemon brightens it if you want contrast.
What you'll end up with: A mellow, naturally sweet cup with rounded liquorice depth lifted by clean peppermint, no sugar and no caffeine.
