Evening Infusion Latte

Warm milk and honey works well here. The evening infusion, all chamomile, lemon balm and mint, is brewed strong then topped with frothed warm milk and a spoon of honey, so it comes out creamy and mildly floral with no caffeine in it. It is a quiet, warming drink rather than a flavour packed one; the point is the warmth and the soft, honeyed chamomile.

You'll need

  • 2 tea bags of Lipton Evening Infusion (for concentrate)
  • 100ml freshly drawn water at 100C, just off the boil
  • 180ml whole milk
  • 1 teaspoon of clear honey
  • 1 280ml mug, warmed
  • 1 small saucepan and a saucer for covering
  • 1 small balloon whisk or milk frother

Method

  1. Warm your mug. Steep two tea bags in just 100ml of just boiled water for five minutes, covered, for a strong concentrate.
  2. Lift out the bags, press gently, and stir the honey into the concentrate.
  3. Heat the milk until steaming but not boiling, and froth until smooth.
  4. Pour the concentrate into the mug and top with the frothed milk.
  5. Tip: use whole milk for the creamiest result, or a barista oat milk to keep it dairy free.
What you'll end up with: A warm, creamy, honeyed latte of chamomile and herbs, caffeine free and gently floral.
