The recipe

Exact quantities, then the method.

This caffeine-free infusion leads with cool peppermint, backed by a sweet note of fennel and ginger. Because it is herbal, give it a proper five minute steep in just-boiled water to draw all of that out. A clean, minty cup, with no milk and no caffeine.

You'll need

  • 1 tea bag of Twinings Digest
  • 200ml freshly boiled water (100C)
  • A little honey, to taste (optional)

Method

  1. Pop the bag into your favourite cup or mug.
  2. Pour over the freshly boiled water.
  3. Steep for a full 5 minutes to draw out the peppermint and fennel.
  4. Lift out the bag and add a little honey if you like. No milk needed.
  5. Cover the cup while it steeps to keep the peppermint oils from escaping.
What you'll end up with: A minty, caffeine-free cup with a sweet hint of fennel and ginger, refreshing after dinner.
